Select "Wait until I launch..." option from Properties in your library. Go to steamapps folder, find appmanifest_[appid] and set it to read-only. Note that you have to do that again each the Steam client updates, but the said option will keep Steam at bay.
In some cases you can actually change to a certain version of a game.
Seems that's tucked away under "beta" options in the game's properties, if they set something up for it.

You can turn that off, you have total control of when or if you game updates.
It is a setting.
Now that wont work for any sort of multiplayer. You all have to be on the same build.
Simply giving us an option to not be forced into updates would completely remove my number one reason for using other digital sales platforms.
