Have 100 cards in hand
How is this achievement supposed to be obtained?
The game seems to cap my hand size and the achievement is not counted despite having enough cards queued up?
I had Egg of Midas (1 chick in hand at start for each 50 gold) with over 600k gold which should be 12k chicks in hand, yet the achievement didn't unlock.
The only other thing I can think of is Elixir Pump? But you'd need something like 90+ elixir pump down which is a very specific type of run on top of getting such a specific card.

I have the acheivement and dont recall doing anything crazy to get it, so maybe it counts overflow from phantom cards? My guess is the easy way would be Seed of fire+ and the relic that doubles cards created, that will get you an exponential amount of cards in your hand.

Yeah, that combo is exactly how I did it. You might have to meditate (go for the true ending) to pull it off, most enemies don't have enough hp to survive that many seeds of fire.

Use the zodiac cards, make sure you have at least one snake and some upgraded monkeys. the snakes double the amount of cards in hand and exile. the monkeys play the last non monkey exile twice. (which is snake)

once you have that going you just need to make sure that you have over a hundred cards to have in hand at the same time. the game caps the amount of phantom cards you can have in hand to 30 but the apple pain cards which snakes give you should let you get over 100 cards just bu repeatedly cycling 2-3 monkeys multiple times.
