Is there a guide that explains all the different symbols in the combo list?

I don't think so. The notation style is one of those things experienced players take for granted and forget how non-intuitive it can be.

Without knowing how much you know about fighting games, here are some broad strokes:

P, K, H, T and S refer to whichever buttons on your controller you've assigned to those letters. Check your Options menu to confirm.

A white arrow indicates a direction that should be tapped and released, whereas a black arrow indicates a direction that should held until the end of the move (or until you're told to press a different direction).

A small, upside-down white triangle over P, K or T means you can hold down the button to get a different attack than you'd get by just tapping it. For purposes of the combo challenge, they usually mean hold it as long as possible.

A white dot between two inputs means you should pause before hitting the next input. How long to pause often varies depending on the move.

If you see an arrow to the left of P, K, H, T or S, it means do the direction input and the button input simultaneously.
However, if you see something like →PK, it means press forward and P simultaneously, then release them and press K by itself.
Whereas if it said →P+K, that would mean press all 3 simultaneously. So P, K, H, T and S are always pressed in sequential order unless there's a + symbol between them, but in the case of directional inputs followed by a button they don't bother to put the + symbol in.

Finally, if you see a curved arrow, that means you roll the directional input on your pad or stick starting from the end of the arrow and ending at the tip. Most commonly they'll start from the down direction and then roll either directly forward or directly backward. You press the attack button at the end of the rolling motion, not the beginning.

If there's anything I've overlooked, feel free to ask.

I've never played either and I find it inexcusable. For example, to the right of some of the moves is "FR" or "BB" or "BH" For those of us (like me) who have never played DOA games, how could they not have a glossary or a help button? That's just insane, to me. I mean, I asked ChatGPT and I now know it's Fatal Rush, Break Blow, and Break Hold (assuming ChatGPT is correct...it gets things like this wrong all the time)....but I just can't understand how they didn't take a few minutes to make a guide. It truly is inexcusable. I think the command list instruction will explain each symbol press, but who wants to go through all that to find a quick answer to what a freakin' symbol or code means?
