I just don't know with what action, because the result looks so weird.
After several attempts, I concluded that it is probably a grab.
Do I need to dodge out of the way just at the right moment in order to survive this?
Also, yes there are other perilous that don't fall into those categories. There are mild combinations of them, and there's a couple of other attacks that aren't any of them but are indeed simply unblockable.
What you want is to carefully look at the enemies’ body language. What type of attack they do will naturally depend on how they execute it. For example, thrust attacks usually are charged back, sweeps will usually see the enemy crouch or lower their stance, etc.
As a general rule of thumb, is fine to avoid them all by sprinting away an observing first. Once you've seen a few of them a couple of times you start noticing those things I'm mentioning, and they can be applied to similar enemies moving forward. So for example, all humanoid enemies doing a thrust attack will charge their weapon, or a leg in a certain case, backwards before thrusting forward.
This has all been said before, but here's something that hasn't: sometimes, very rarely, you get a weird outlier. The guardian ape has a sweep that's also a grab. And most importantly, even though there are only two of them in the entire game (I think), you can PARRY the snake eyes' grab when they try to hook you towards them. This would have saved me a LOT of headache if I knew it when I fought them.
Suffering guys in Abandoned Dungeon do what appears to be a grab - it can't be blocked and deflected, but doesn't register as perilous.
But apart from a much-rehearsed fight with Lady Butterfly, I rarely can react to them fast enough.
Especially sweeps - they require a button that is not otherwise used in combat.
How to practice switching from focus on deflection to these sudden changes?

At first, I didn't even know she had a sweep (was dying in the first seconds of battle the moment she does grab). It just looked like "she does something, including stabbing me, I am now dead".
