I'll say it would be nice to have better and more varied AIs. I don't think they're a priority for the dev team beyond fixing any serious issues. The main one that needs addressing is water play. AI just can't do it.
Finally finish with this. Maybe you and your friends should try playing against each other more. Human opponents are far more interesting. So long as skill levels are no to wide you can have fun. You can even balance things out with the handicap system. You can use treaties to reduce early game rushing. I think playing against AI long term is dull in any game as you figure out it's weaknesses over time, you leaves you coming up with more and more novel ways to win.
