And many Ubisoft games are biased towards AMD graphics and the CPU usage is slightly higher with Nvidia GPUs for some reason but it shouldn't be enough to make any real big difference in game play.
Also with Windows 11 there seems to be some weirdness going on there with AMD Zen 4 and Zen 5 CPUs that affects some games more than others
You mentioned your high end system and I have a question, how high does your cpu usage go when you uncap your fps and how many fps you get? You have a better graphics card ofcourse than me but our cpus are very similar so maybe you could answer me my question.
And on which setting should I run the clouds? The 2. best?
I also have the Ubisoft overlay turned off and Cloud Saves turned off and no RGB software running in the background

I will try your settings out to find out if my cpu usage gets better.

Are your frames capped or unlimited?
I'm unlimited and have a 165 Hz FreeSync monitor but I used to have a 60 Hz monitor ran unsynced getting between 70 - 80 FPS. In Valhalla I had to use Fast Sync in the Nvidia Control Panel or I would get tearing especially if I had DLDSR enabled
