The old phrase, you are what you eat pretty much.
We have messed with just about everything we eat these days, almost every fruit and vegetable we consume is unnatural, genetically modified or a byproduct of human hybrid breeding between different plants.
Much of our food is highly processed, vast amounts of nutrients are stripped away or lost during these processes leaving mostly excessive crap like bad carbs.
Bad sugars and fats are crammed into everything for flavour etc as well, preservatives and various chemicals used for all sorts of reasons etc.
Seed oils are probably one of the worst things we consume these days imo, and some businesses are even going back to cooking with natural animal fats.. which is far better for your health imo and will also mean the food will taste better.
The more natural the food the better it is for you if you ask me, and you won't get better than meat and animal products there.. but there are people messing around with even that as well.
Thing is, we're all just guinea pig for things like big pharma and the food industry etc, they don't know how all this messing with food, substances and even medications will actually affect the species long term.. and anyone who sits there and tells you they do know is either ignorant or lying.
It takes a very long time to actually figure this kind of stuff out, to see what negative effects this medication will have or that food process will do.. and to get there you need to see those long term effects play out.
Just look at how often the food pyramid changes, what is considered bad now was considered healthy years ago, and much of what they say is healthy now many people contest and question.
It's always changing like that, and it's not always because of new data or discoveries either, sometimes it's good old money and influence doing it's thing.
And the people behind all that couldn't give a ounce of f's if they end up giving millions of people cancers or neurological disorders etc.. as long as they make bank off it.
