One thing I don't like
Upgrading bridges and walls is an absolute nightmare. They are both critical infrastructure, so you literally have to dismantle the functioning of your town to get that done. I wish there was a way to plan for the future but there isn't.

Just to be clear, I'm not disagreeing with the point you make, but there is a way to sort of plan for future walls once you know you need to do it.

Plan out fences, but don't click the build button, click the X to close the fence building. You'll see the fence you placed is still there, but because you didn't click to build it, nothing will happen. You can now use the fence as a guide.

I do this around my city all the time, it helps with planning out roads where I put fence either side of where I want the road to be, and because the fence isn't built nothing is set in stone, I can adjust it as needed. Similarly with planning for where I want walls, i place the fence to ensure there's enough space to replace it with walls once they are unlocked.

With bridges its more difficult, but planning out roads at least helps me define where the bridges will eventually be.

I could be wrong, but didn't the dev say they are working on making it so that we could upgrade our fences or walls instead of tearing them down and face houses all downgrading until the new wall is up in the original fences place?

Yeah its part of the short-term road map they put out not long after 1.0 release.

Well, that would be perfect. I really like this game, but getting to that point where it's time to do major surgery on your cute little town is kindof a drag. It reminds me that I probably have dishes to do or something. and it's time to put the game down.
I solved the wall problem in a weird way I suppose. I leave room for the stone wall and when it's time, I just build that new wall around the wooden wall until whatever I want is enclosed by both walls, then I delete the wooden wall without being penalized. It's a hassle and a pain but it works. My first couple of tries were pretty bad, but I'm better at it now.

You can do something similar by building two bridges, then only upgrading one at a time.
They have made it a real struggle to redesign at all. Having to tear down a wall and rebuild can destroy your entire playthrough if not careful. If you have all your lvl 2 houses suddenly lose fortification they downgrade and, you guessed it, tear down and rebuild as lvl 1 houses. That costs massive resources on top of rebuilding the new walls. The whole system is a bit crazy and outdated. Then you add on that you can't build over any path so if you want to do a new layout for your housing areas you can't because there are paths all over the place and houses wont grow anywhere else. It is that you must have a very solid layout from the beginning and once its there its just too hard to move about or change.

I'm never organized no matter how I try to leave space for anything to do it this way, it will be great if the dev comes through, preferably soon'ish (TM) while people are still playing the game.

One modder added a mod (it hides trees so I can see where to actually place walls, without it it's pure guess work where that wall is going to be) for a lack of a feature in the game that made me stop playing, now all that is left is the dev adding this into the game without adding any crashing bugs as it's a solid game that does not have the problem of crashing for me. A bonus of course would be for it to stop making my gaming computer from sounding like the concord taking off for a trip from London to New York.
just build a second bridge? its realistic if anything. oh you want a brand new bridge built in the feudal ages carrying stone by hand AND a burgeoning economy? go plant some wheat.

It's not at all realistic to have everyone leave their city because the wall or bridge is being upgraded. They understand that things are improving. In real life you can have things like ferries or swimming so that people on an island don't starve. The problem here is the behavior of your citizens isn't appropriate.
