Demo is not the real game and That should not happen if the map is set up right, the buildings are on a map file, while the skirmishes are on a mission file in the same folder as the map, The demo map is probably setup differently then, game makers maybe forgot to add those buildings to the garrison building list. Try some more maps first, and check it, this game has custom maps and missions on moddb.com. Most still work just fine.
