Are you going off your map, or the echosounder on the boat?
Wait for the map to load?

AN51 is in the middle of the North Sea. It is very shallow IRL. So is the English channel.

Go a bit further North for a bit more depth (the Northern half of the North Sea. Parallel with Norway / Scotland).

Look up Doggerland. You're basically sailing over relatively recently submerged land (geologically speaking). The North Sea rises in the middle over the Dogger Hills/ Dogger Island.

Best not to hunt in the North sea if you want to go deep. Get out into the Atlantic. The actual "open sea" with plenty of water beneath you.

its called the Dogger Bank, and yes its pretty shallow, 30-50m on average, though some parts are only 10-15m. remember that the echosounder tells you depth beneath the keel, not depth from the surface, so your reading will always be shallower than the actual depth.

The downside to hunting in the north sea between the uk and denmark is that its so shallow, which can make evasion quite hard once the enemy has detected you. The upside is you can dive the wrecks of ships you sink and steal their cargoes for extra food, useful supplies, or even just valuables to sell for a bunch of money. I always buy a diving suit after the first patrol for looting purposes.

^^This.
Unless you are using the echosounder the map depth number is not accurate before the map is loaded (which means you must be very close to that place.)

The Type IIA seems to have had a draught of 3.8 metres. Whatever the OP was doing to get those depths that he quoted was incorrect; the depths recorded here correlate to oceanographic maps I can find online.

Therefore no case to answer that the update changed anything.

Are you using Mods?
I am... and in my game the ecosounder said 8m below my uboat but the 3d camera couldn't even see the bottom - I went down another 30m and the whole time the ecosounder said that the depth was 0m below my boat yet I never got near the ocean floor.

I didn't die so I just carried on playing since I can't be bothered figuring out the cause of the bug.

I did ask you in my first comment if you were using the echo sounder, you didn't reply.

I have not called you a liar, I have said that your results for depths are incorrect - the sea seems accurately modelled when I have used the echo sounder to measure depth.

Note WhjiteWolf's comment above - are you using any mods, as this may be the cause of the inaccuracy you are seeing in the read out from the echo sounder.

As I have said - I have seen no change with the latest update.

How do you get those depths to show on the map? Are they data points from the echosounder, or data that is part of the map/chart?

No I inputted them manually using the map marker, after using the echo sounder in the squares where the OP said he got incorrect results that were too shallow. I put some lat/long locations in too, in case I got bored enough to check the real depths on a real chart.

Addendum - I have repeated this using the depth sounding request from the crew interface, then gone to the Echolot and done it totally manually - I get the same results.

After 300h on the games without any problems of this kind, I now have this bug that appeared for me too and impossible to fix it, for me it makes the game unplayable because every time I go up the surface the sea floor disappears again, when I do an emergency dive, my Uboat dives at 10 meters because the game thinks that the sea floor is close.
apart from bug, Considered how shallow the sea is, IMHO "Action of 22 September 1914" which occurred in Broad Fourteens, southern North Sea (avg 26 m depth), is so awesome. Still didn't understand why the u-boat captain, Weddigen, was awarded just only the Iron Cross for this heroic deed.
