If your captain is Maimed, best way to heal is to take a month off in the City of Keys. Otherwise, you and your crew gradually heal while travelling and visiting locations (you need a surgeon on your team though). Guts stat determines the speed of recovery.

Ah, thanks. The guides never mentioned that the captain heals like that too, and I'm not aware of a way to see your own status.
