Hey there, it is not possible through a setting in the renewed versions as so many parts have been added/changed and optimised, but it is possible to revert to an older version of the game using the old look. You may use the beta access code "doublethefun" to enable a beta build named "twocontrollers". Simply right click on the game in your library, select Properties->Betas and enter the code. Steam should automatically start downloading.

This version dates back to 2016; therefore, newer save files may not be compatible, including the changes made to the options. Resolution and screen percentage settings would probably not translate correctly and you may end up with blurred or low-res graphics. The easiest way of solving any potential issues would be to delete the files named "Settings" and "Key Bindings" in the path "username\AppData\Local\Recourse\Saved\SaveGames", then readjust the necessary settings after launching the game.
