It would probably look somewhat like this :

Couple vehicles bays, couple point def for overkilling those guardian missiles. IDK where the utilities are located on the mandalay so you might want to move them on top. One is probably enough.
Supercruise assist for the far-out secondaries, double afmu for if you want to neutron jump. Deactivate when not in use ; same for the shield and vehicle bay.
Size 4 corrosion resistant cargo rack to bring back souvenirs.
One size 3 free spot for whatever floats your boat.
If going really, really deep, take a single mining laser to gather synth materials.
The FSD on Coriolis is the regular SCO ; you will get better numbers with the new experimental one.
You've just got a regular SCO then. You're looking for the pre-engineered SCO:

You use material synthesis to produce repair limpets, afmu ammo, heat sinks, rover fuel...whatever. If going really far out for a long time, you may run out of these materials, so you can use a mining laser on some asteroid to gather a few and keep going forever.
edit : this is really for the hardcore explorer kit ; for guardian site operations you absolutely don't need all that.
