Anyone always fly with 'flight assist' off?

Its hard and gets tedious. There really isn't anything that needs precision flying, landing or lining up so seems a bit pointless to have fa off.

I turn it off often.

if im in combat Ill turn it off to allow firing backwards in a turn fight.

ill also turn it off when im engaging larger ships with my missle boat. Ill engage travel drive and get up to 5000ms then turn it off and launch my missles while zipping past the enemy before they have a chance to get any shot on me. Its a fun tactic which is very helpful to take out larger targets or groups in a safe ish manner.
