At somepoint you buy skill tree points using Corrupted Blood. (up to 20, which is max)
You can also buy Skill Tree Branches (two last ones) using Corrupted Blood.
Anything else require you using Soul Cinders, like weapons, medallions, first skill tree branches and skill tree points etc.
So you reached quite high level. You can get around 250 Corrupted blood per run, choose corrupted blood (100) from Lhamo (when you will have all Awakening runes you can pick 200 Soul Cinders or 100 Blood). It will speed up collecting the red currency.
The last Skill Tree points use different currency, but are not too princy. You can have only 20 of them (and I think you have around 12-14 from Soul Cinders).
About the health, it's pre "Second Act" update thing. We used to have 1000 HP at start and around 1300 with skill tree perks. Now 200 is starting health and around 280 with skill tree perks. So you just watch at old videos/screenshots, before the game got huge balancing changes.
Temporary you can use Awakening Runes that increase enemy health/damage as they doesn't work, if you want to cheat a bit and speed up getting the red currency -- of course, you don't have to. Just a little trick till they fix the bug. Keep in mind that Corrupted Blood is permanent currency, and you can not lose it like Soul Cinders.
