So the full release is out, and I purchased United Penguin Kingdom. This means I can uninstall United Penguin Kingdom:Huddle Up correct? Because UPKHU is the demo version right?

Yes, United Penguin Kingdom: Huddle up is a short and free version of the full-game United Penguin Kingdom.
You can uninstall UPKHU :)
