Mac OS Update macOSBigSur (11.0.0 +): Temporarily Incompatible

Shovel Knight: Treasure Trove and all the standalone versions of the Shovel Knight series are having compatibility issues with the latest Mac OS update, macOSBigSur (11.0.0 +). Weirdly, the FAQs - available at https://www.yachtclubgames.com/support/ - claim that an update fixing this was released.

According to steamDB, combined with when this thread was posted, this could only have been the March 1st 2021 update, which has no patch notes (on steam) linked to it. And let's not forget that requirements on the store page still claim only Catalina and older are supported.

So what is actually going on?
