I recommend to temporary disable encounters and enable later once you are fully equipped.
- Global Encounter Cap = Enemy Factorum stations in space only.
- Encounter amount = Space and can be setup on creating a new world only.
- Random encounters = Space only
- Enable Drones = Space only.
- Enable planetary encounters = All planets and moons.
- Cargo ship = Adds Cargo ships bond to Trade stations and we can loot those ship in space where some Trade Faction will become enemy if you attack their Cargo ships.
- Economy = That adds Trade stations with contracts we can do for them and gain reputation points, they also have different stores where we can buy and sell.
- The animals count slider and Wolves/Spiders ON/OFF = Wolves on Earth, Spiders on Pertam, Alien and Titan.
A setting I like the most is to disable "Auto-Respawn" in advanced world settings, this way I have full control of where I want to respawn because all my Medic Rooms and Survival Kits will be listed in the Respawn screen when my character is killed and I can choose to respawn where I want to.
That is a thing we can't do when "Auto-Respawn" is enabled.
We got A Lot new blocks, new PVE options and available premade worlds are now classified in different Categories :
1 - Sandbox = Worlds where we can do all we want.
2 - Story scenarios = Solo scenarios.
3 - PVP scenarios = To play MP.
4 - Original content = Old worlds and some with enemy on all Planets and Moons.
5 - Community content = Those are worlds to download from the Workshop.

IF not already done, I strongly recommend to read the new Guides added to the Official SE Website, they detailed a lot of the new blocks they added for free :

It's a thing me too have learned the hard way, I was in the "Learning to survive scenario" where my character got killed on Earth planet and I respawned on the first asteroid of the scenario.
I now have Survival KIt on my ship I keep close to me, I even have one with AI blocks set to follow my character so I can respawn close to my dead body to recover my Back Pack inventory.
Edit
Sorry, corrections made.

I can respawn where I want to in my worlds and will see why you have problems if you give me your save for testing.
-> How to save a world in your Workshop and paste the link here :
1 - Select your save.
2 - Click the "Publish" button on the left.
3 - Choose a proper Tag, check Steam upload and click the OK button.
4 - Your world will be uploaded to Steam Workshop.
5 - Paste the Workshop item link here (copy URL).
So, anyway, this design choice seems odd.
