Two most importants are:

Mortars - you can use them either directly (like normal infantry - they have to see the enemy) or indirectly (like artillery, when they don't see the enemy, you need a spotter and be in contact with the mortars).
I personally prefer turn-based mode, but you can also play in real time. In real time you have more control over your units (you can issue orders at any time), but it is much easier to miss something, because you don't have replays.
All your units will automatically fire on any enemy in range, unless you give them "hide" order or restrict their firing arc.
If you want them to hold fire, you can either issue a "hide" order (which means, they will try to hide, will be harder to hit, but they will also have reduced visibility) or restrict their firing arc. You can do it with "target arc" order while holding SHIFT, it is described in the tutorial.
