Okay, I haven't played either of these three
I love SotN. That's my Castlevania experience. Which do I start with?

Dawn of Sorrow is a direct sequel to Aria of Sorrow.

So you probably want to play that first. Unless you dont really care for playing a sequel game first.
I recommend seeking Order of Ecclesia for last because it's a very difficult game, the harder of the 3. Dawn is the perfect start in every way, Portrait of Ruin is the great follow up and Order of Ecclesia is the perfect conclusion.

No, it's not. If you can handle Dawn and Portrait, you will be fine with Ecclesia. The game has one tricky boss near the start and suddenly the entire game is "very difficult." Gimmie a break.

Just note that Dawn of Sorrow has a few "Nintendo DS-isms" that you may not enjoy and aren't translated well into controller inputs. One upgrade requires moving a cursor around to delete blocks, which is pretty awkward to control via controller (but likely isn't terrible with mouse). There are QTE like events to finish each boss (which were originally drawing on the DS's touchscreen), YMMV if you like those or not. Finally, there's a required 15 sliding block puzzle and you need to do multiple solutions to get all the rewards and open all the paths.
