Is it possible to defeat Daigneux in H scene?

Her stamina meter drops at a really slow pace.

What strategy can we use to win that "battle"?

The egg vibrator drains her stamina faster than it drains yours, provided you've built a lot of stamina from various achievements. It becomes available in the shop around day 40ish.

It's also the first easy way to max out clit achievements, but I already had them maxed by day 30.
