Wrong game, this is the second game not the first. To answer your question though, if you lost both your arms at the start you should probably just restart, there are only two ways to get limbs back and they’re later in the game. Any fight where the enemy has blades or sharp objects, assume that limb loss is possible.

You could also specifically target the arm with a sharp tool first, then both legs then chop off the head

Avoidance is part of the early game. Most of the fights have that kind of risk, that's why you can atack on limbs, the game have armor and accesories that prevent those.
