The new UI elements are able to be scaled using a scaler in options. There are some issues though because there are many UI elements that haven't been updated to the new UI system yet. The new elements will automatically be set on top of old elements and can cause issues for some things you might want to be seeing over "temporary" opened new UI elements (like inventory covering all open bags). Also, the old UI elements aren't affected by the scaling and some of them are ones you'd have issues with reading at higher resolutions.
My suggestion (and what I personally use to deal with this) is to just run in a lower resolution until the update is complete. I personally have disabled the new UI in options until they are more complete with the change over.
You could also just live with adjusting to using the new UI elements scaled with your preferred higher resolution and just adapt to being less able to read the remaining old elements until they are converted.
