This is kind of a kill-them-before-they-kill-you kind of game. Personally, I prefer the rifle.
When u get perks it becomes easier. Currently I'm finishing hard (not the real west) game and had only one or two moments where I had to spend some time repeating. The worst is the hounted town... jeeezzz... I hate this one, though I could like it in terms of the lore ;-P
Good luck.
BUT:
I played hard first, it was really hard (especially some situations), then easy for recollections, now im in the middle in true west difficulty, and I have to say, itrue west is easier with upgrades, than hard was without any upgrades at first. So I think the key is the upgrade tree.
2:
Where I cant advance, it looks like impossible for me, its the apache territory map. It seems this map eats quicker the combo, than any other map (one missed shot and it ends). 42 was my higher combo many times, and it gives only 2 stars. Any tips?
That was really a pain at my first play, I died many times too, then after a restart i throw all my dynamites up out of anger, where Plummer spawns first, and it took 3/4 of his life, some rifle shoot, and the job was done.
And it worked on all the three difficulties, so I think the key is throwing dynamites.
You can defeat him by ducking behind wooden crates to the left. Enemies are not good at throwing dynamites over obstacles and most sticks will bounce off and land on the other side of crates. Just do not panic when you see dynamite icon too close - it will not harm you through the crate. It should give you more controlled combat and you can lean out and shoot in convenient moments. Aim for his dynamite belt and throw dynamite at him - both tactics are very efficient.
Unfortunately this is not 100% reliable tactic, sometimes dynamite will fall next to you resulting in instant death. But you should get lucky after few tries and have enough time to defeat him.
Every time I played that boss, playing offensive worked great.
Attacking first
Throwing all the dynamite at him and his goons, and when he tries to shoot you using concentration on his head.
Also getting rid of the goons as soon as they appear.
Splitting dynamite perk is super helpful.
