If you're having difficulty with a specific boss fight, maybe you should ask for advice. (I had a bit of difficulty on the "Find the mysterious man" boss fight, but honestly it was one of the cooler boss fights I've played in a long time).
When he says something along the lines of "WELL this is what you were waiting for right?! A game over?"
He put the boss fights in because he was probably worried that so many of his fans wouldn't enjoy the game without action in it. But also I think its meant to be an interruption, I think Higgs is also being sarcastic when he said that. I always took it as kojima saying "YOU NERDS CAN'T JUST PLAY A GOOD GAME ABOUT HELPING PEOPLE SO HERES A FIGHT THAT MESSES WITH THE FLOW, YOU WANTED IT".
And to be fair all of the boss encounters at least add to the story or at least add to the overall metaphor so they aren't completely random.
The set piece fights against the catchers were ok if you happened to be stocked up on blood weapons but a bit annoying if you have to rely on collecting supplies during the fight.
The fights against the BTs were a bit dull, especially the ones which were essentially just suped-up versions of BTs you can randomly encounter.
