What do the difficulties do?

It would be nice to know without needing to rely on trial and error. I tried searching for it on Google, but didn't get a single result relevant to the game. I did get a few sleep tips though.

From what I noticed the higher difficulty you pick the less hearts you have and the faster enemies are. Also, you can only run for a limited time on Hell difficulty. You can change it anytime without starting a new game. Game gets quite frustrating later on, levels are full of monsters going bonkers as soon as they see you.
