How to change keyboard keys? The default settings are horrible!

Why on earth do you loose weapons from one level to the next. I like the many different guns you have but you do not know what your picking up and what your fire is going to be. Say im firing some long missle type weapons, the next collectable will give me say a ray or a different colored type of shot. There is little telling on the ship screen where there's stars for each ship type what exactly that means in ANY format. The gameplay is good but i would like to see say a windowmode.
