But pleae keep in mind that thousands of players have played and beat the game without issue, and that you are the first person reporting this kind of problems.
Therefore, it seems very likely that the problems are somewhat related with your harware and/or software. I am not saying it is your fault though. this kind of things can happen when it comes to PC gaming.

Have you tried to change the scaling options (in the in-game options menu)?
The game runs at full screen on the Steam Deck. I´ll need to check the demo just in case it is somewhat different.
