Your veil (dodge) also makes you invisible for a moment, but that invisibility breaks when you attack. Use it to potentially draw multiple attacks from enemies while your cooldowns come back or to reposition. The chaos dodge in particular can be used twice in short succession.
Defensive spells like counters and barriers are great since they both negate the attacks and often retaliate in some way.
Some weapon abilities have good movement or i-frames in them. The mace and axe Q attacks are good for closing the distance, or to move out of the way of incoming damage. The sword Q attack ignores unit collision, allowing you to slip behind enemies as they attack while you continue dealing damage.
And there's sometimes the option to feed on enemies in the middle of combat. The movement towards and the bite execute afterwards both have i-frames, so smart use of that can be an extra dodge or two.
Then there's the final option: unholy ranger. Use ranged weapons so it's easier to stay away from foes while you keep attacking, and use unholy spells to summon minions to distract and tank damage for you.
Summon skeletons with corrupted skull to keep him busy, and pelt him with spells and arrows from just outside the arena. You avoid the traps that way, and may not even get hit at all.

Anyways do Goreswine first, he's easier (at least to me), then you can craft a better ring, make grave dust for a castle waygate and get a green spellpoint for corrupted skull. Which is an extremely useful spell for a solo player because when enemies are beating on a summoned skeleton they aren't beating on you.

That may be your issue. The boss mechanics seem to be designed for at least two players, with one dodging attacks while the other(s) attack it. Takes a bit more finesse soloing bosses designed in that way.
In the end I submit your experience is going to be not the most pleasant if you try to learn the game for the first time on a higher difficulty.

I use a pure melee build, without ranged attacks.
blocking skills at least one, dodging skill, in addition to some weapon that allows dodging, such as the two-handed sword with its jumping attack, give ample possibilities to dodge any attack if one recognizes the pattern
