Spinning around in circles has a tendency to happen when a second input device is detected (prior reports had this issue when using DirectInout on a controller emulator). Are you certain you're not using new software you didn't use before? Something that changes the behavior of your Steam Deck's input?
If you roll back to an older version using Steam Beta, does the problem persist?

You can check by turning on advanced settings in the Gamepad menu and then checking or fiddling with the Deadzone setting under each axis. Make sure they are not set to zero, that pretty much works for nobody.

Also verify that only one device is shown in the gamepad menu!
