Everyone should do a review for all "steam is learning about this game" game's that they play to help get the game recognised by steam & then achievements will count towards profile totals.
they do count, but, if you completed the whole game, you cannot showcase it in your profile as "completionist"
In the game series "I commissioned a few bees" the 100% on my profile is only counted for the first part. The other parts are no different from the genre, but have probably not been bought and played as often as the first part. So if enough ratings have been submitted, it will probably be submitted later so that it counts on the profile
