If I picked a ending, will I still be able to pick items that I have not?
will the items still be there or will they disappear

you still can pick it up, unless it was quest item.

also only the ones that arent buried in the ash in leydell

The world will remain as it was until you start the next journey. Going from beating the final boss to picking an ending, nothing important changes.

Once you beat Maliketh, the game shouldn't change anymore, ending or no ending.
