That being said, Elden Ring so wouldn't work in any way shape or form that I could see without it stopping to be Elden Ring, so that's a hard no.

Summoning other players,summoning npcs,or summoning spirit ashes has proven that agro of more than one target breaks literally all the fights and combat in Elden ring due to how the enemies movesets are designed.
Not to mention the MMO scene is heavily focused on rping and casual combat these days.
A large % of the mmo gamer population of the newer generations dont like challenging content(look what happend to ff14 and why so many people quit wow).
Not to mention many souls like players wouldnt be keen on mmo elements for a souls game.
You'd end up with a game that well wouldnt really appeal to anybody and likely be full of empty server within a year of release except for some die hard pvpers.
my thinking is that we'd instead end up with a souls game with all sorts of stupid minigames tied to it so there's something for just about anyone. fishing, crafting, gathering, a pokemon-style minigame where you capture and train hollows to battle one another. a version of firelink shrine where you can recruit and level up NPCs and have to do something for them once a day or they get feisty.
dailies and weeklies too. can't let the player just stop playing without consequences.
It is one of the most soul crushing activities in any MMO.
