Can't re-race the final bonus track?
Thought I'd be able to re-race at the final Dickmann track (Hawaii?) but it's not selectable in Quick Race/Time Trial?

No this is by design. The duel track is only playable at the end of the world tour.

You can however reset the world tour and play through it again if you want. It will be the same experience, including the final duel, but now with the red car unlocked and available to you.

Resetting the world tour will not remove your unlocked tracks from QuickRace/Time Trial. So all currently unlocked tracks will continue to be available in these game modes.

To perform a reset, start world tour and proceed to the track selection screen. There you'll have the option to "Reset WT" by pressing the "End" key.
