I wouldn't consider it 'Ubisoft Levels of ♥♥♥♥' since Gust has been putting out a yearly Atelier game LONG before Ubisoft Gained that notoriety themselves.
Also, as to which one to start with, Pick one, Each one is largely it's own thing only slighty connected to others within it's series. This isn't like Trails were there are certain games that directly precede one another, this is more like Ys were each one is more or less it's own thing with loosely connected threads.

I dunno if I'd call it that loose. Ys, with how minor the stories generally are, how replaceable Adol is and so on, you don't need to worry. But Atelier has many recurring major characters within its sub seasons.
Just to take Dusk as an example, you have Wilbell in Ayesha and see how she grows and ultimately makes a contract with a wind spirit. (if you do here events and raise her friendship) In Escha & Logy she is older, looks a bit different and eventually makes a contract with a fire spirit. (again, if you raise her friendship and so on) Finally in Dusk she becomes a teacher of sort of one of the Shallies and eventually takes on the water spirit. Not like you NEED to actually play the games before, you definitely don't. But this is definitely much more connected than Ys. The only main difference to something like Trails is, that order doesn't matter. You can start with Shallie, go back to Escha and Logy if you want, and finish with Ayesha. Outside of game mechanics developing the wrong way, there's no issue. That's why Totori DX -> Meruru DX -> Rorona DX is recommended, as mechanically Rorona DX is the newest and it even assumes you actually played the other two for its final part, even though it's chronologically the first entry of the sub series.


Anyways, TK isn't good handling this series in the west. Price-wise, marketing-wise and so on. I'm sad about that myself, and most people here will already know the series for a long time. Without TK actually getting some good staff who cares about their products, this won't change either. Right now, they don't even get 5 digit sales for these games on Steam. (or if, then barely) Ryza was an exception, but that was literally luck, and with the game being as bad as it was, it probably won't last. Thighs can only carry you so far.
As long as TK isn't changing, it's not strange for people to look at this series and ignore it, because there's absolutely no help given how to even start it, barely sales and generally high prices. That's not how people try it out. Especially not on Steam.
