Plot question because i think i missed a detail

What were the newborns being used for again and was it all or some?
i remember a lot were given to The Hand but i dont think i ever caught what the Hand was doin with them.

It was only a few chosen ones every year. According to the church's story, they were given a part of The Hand's powers to help it fight the monsters on the surface so that they don't get to the Underground. In reality, from what I gathered, it's hinted that The Hand feeds on/collects their souls but I'm not entirely sure, either it was never fully explained or I also missed it.
