Just increase the 'core_marksmanship' value of the unit to the number you like and save it, see if it matches the in-game stats to confirm it worked.
Same method goes for all other units, but if they're not DLC units like the Marines, you should do it in 'main.pack'
Are the boxes grayed out? If so, you'll need to go to the 'Options' tab in the PFM and uncheck 'CA Packs Are Read Only' and you should be able to edit them.
Chances are something is conflicting with another pack or maybe something important is getting changed. Crashes on startup mean something is wrong with your pack files and not necessarily a unit.
Your edit is most likely working, but is being replaced by a redundant unit from another pack. Sometimes, there are multiple of the same units spread across packs. You'll have to look through the other unit tables and make the same edits to every table you find. Eventually, you should get it working.
