You can cheese police raids if you design your factory with a single door. When you get the notification of the police raid don't do anything before going over to your factory and remove the door. Your employees will go a little crazy for a while but the gunmen can't get them. Eventually the gunmen will leave, you can replace the door and resume operations. Works 100%.

Skip the tutorial and go straight into making a casino. Don't hire anybody but the engineer and cleaner for four hours per day. Put a few slot machines in it and you'll start making money. After you've made enough money hire one person to work the tables or upgrade your license. Upgrading your license enough to get the fourth tier of slot machine makes you a lot of money. There are no raids on your casino. The factory isn't needed.

Alternatively you can make a laundromat. It'll be slower but still profitable. Food doesn't seem to be profitable though.
