I think if you're using the original non-GL Quake or QuakeWorld engine, you're stuck with whatever statusbar size it wants to give you. Otherwise, let us know what Quake engine you're using and probably we can work something out.
A more general answer:
For GLQuake and some other engines, the statusbar size and shape depend on the size and shape of the console. If you're playing with a screen resolution that has a 4x3 aspect ratio, you probably want to use the original console dimensions of 640x480. For other aspect ratios you'd want console dimensions in the same aspect ratio but with close to the original console height (so for 16x10 use 768x480; for 16x9 maybe 864x486).

and skip down to the "Widescreen" section, it talks about how to set the console dimensions for some engines.
Some other engines don't use the console dimensions in that way. For those other engines there's generally some console variable that you can use to directly set your statusbar size. The "Widescreen" section of that guide talks about that some too.
In any case, just share what engine you're using and we'll go from there.
Steam only provides version 0.95 of GLQuake for some reason, but you can get version 0.97 from the id software FTP site ( ftp:/ftp.idsoftware.com/idstuff/unsup/glq1114.exe ). Version 0.98 is a little harder to find but last I looked it was still available at some places like http://www.quaketerminus.com/nqexes/glquake098alpha.zip . Just get the new GLQuake executable and throw away any opengl32.dll library that comes with it (some installers call that the "3Dfx GL miniport"). You don't need that library any more with today's video cards and drivers, you only need the glquake.exe executable.
Once you have the new executable, use that for launching Quake. You can even replace the Steam GLQuake executable with it if you like... it's not like Steam is ever going to update/patch GLQuake.
With that newer version of GLQuake you can set your screen resolution and console dimensions like the Quake Owner's Manual guide describes, using command-line options. If you want an example for a particular resolution just let me know.
It's a little clunky but you can get it sorted. :-)
As for GLQuake, they've had stretched status bars since forever. The -conwidth parameter, particularly. However in GLQuake it has the drawback of not compensating the refdef size (the viewing area) so the bottom is clipped off, hiding your gun more than a normal 320x200 sotware mode would do.
