So if I get the DLC and decide and I don't like it, I can turn it off and go right back to how DS was before I bought the DLC?
Yes I bought it and when you create a game you can unchek the DLC in the game.
Back in the day we would get teeny tiny updates, this DLC contains way more content that all those free updates combined. I can't list everything that has been changed from the base game due to obvious spoiler reasons. Follow the links I have given to you to see exactly what has been changed for yourself. You'll find the current price tag is very reasonable.
I agree. This is Klei we're talking about. Not EA. "DLC" actually means something here.

???
What was the name of that one expansion pack/DLC for Half-Life that everybody loved? Oh yeah, Half-Life 2. I guess the big difference here is Klei didn't save all of this content for DS 2. That would have been better right?
